The NC Triangle Chapter of the Commanderie de Bordeau is hosting the National Chapter‘s Educateur Forum at the JB Duke Hotel from May 15-17. The last evening is the Gala dinner. Please join us at this event and get to meet fellow Commandeurs from across the country.

Attire: Black Tie with Medallions
The Foods:
- canapes - MELON - compressed honeydew / blue crab / preserved lemon / coconut
- 1st - HAMACHICRUDO - lemongrass cured / yuzu / grapefruit / shiso / Calvisius osetra caviar / green sorrel
- 2nd - DUCKBREAST - orange honey glazed / salt baked celeriac / fava beans / pickled ramps / duck jus
- 3rd - BEEFFILET - yukon potato gratin / black garlic / shimeji mushroom / truffled veal jus
- 4th - CITRUSPAVLOVA - meyer lemon / kaffir lime curd / candied kumquats / charred meringue
The Wines:
- Champagne (provided)
- White Bordeaux (provided)
- Sauternes (provided)
- Red Bordeaux (each person is asked to bring a bottle of Bordeaux that inspires them. Please bring a classified growth from your cellar. If you don’t have one, please contact Ken Place for ideas on where to find one) This portion of the dinner is Paulee style, which means that you will be able to share your wines with others AND more importantly, you will be able to taste the wines that fellow Commandeurs bring.
